My Experiment with Basil Pesto

March 15, 2016 By Mary Hill 1 Comment

I am not a cooking blog, but I tried a healthy recipe of  basil pesto using fresh my own freshly grown basil.

Creating Basil Pesto in my Ninja blender is quick and easy.

I added the basil pesto to whole wheat pasta. I thought it was just “okay.” It looks delicious. I miss the real pasta, butter, and sauce. I am trying to make a change for the better. My recipe for pesto was simple:  fresh basil that I grew in my window, pine nuts, garlic, and extra-virgin olive oil. I did not measure, just eyed the mixture. I know I used a good handful of my basil right off the plant.

Spring is in the air here in the South. I am going to transplant these outdoors. I only had one plant; so all that is left is pretty much a  just stem. My attempt to make basil pesto succeeded somewhat. Have you tried to grow herbs and use them in fresh recipes?

Gardening Herbs: Creating Basil Pesto and More

This spring I dream of creating an herb garden filled with basil, oregano, chives, mint, and thyme. I loved to garden in my 20s, but I haven’t been able to since the onset of my arthritis. Now, I use pots and a wagon. My husband found it for me on the side of the road two years ago. He plans to touch it up with fresh paint this year.  My goal: fill it with pots of herbs and flowers. I might even grow tomatoes and squash.

What are your gardening goals this year?  Do you grow herbs and have you ever tried basil pesto?

I leave you this poetic thought:

Basil, Oregano, and Thyme
A trio of Italy
Chives and wild onions grow in my
Southern fields
I still smell the sweet mint under my building that
I let grow wild in the spring and summer seasons
Herbs bring spice and season
To recipes and life.
Their flowers blue, purple, and white,
They bring beauty
and promise
of health and youth

I love the combination of cooking, herbs and poetry. What a great idea. I think I’ll try this myself.
